This week's cookie is the Lemon Snicker.
Take your basic snickerdoodle recipe and substitute lemon extract for the vanilla extract and add 1/2 a teaspoon to the granulate sugar you roll the cookies around in before you bake them.
Mmm...so delish! I love the chewy semi-baked centers!
Even though I had to turn the oven on to make these, they're a very "summery" cookie.

I love lemon cookies. I haven't made snickerdoodles for years but I could be tempted to turn on the oven for those.

Now that is an excellent idea, subbing in lemon for vanilla! But I think you should call them Lemondoodles. Just so you can say doodle. DoodleDoodleDoodleDoodle.
